Demonstration
Classes:
Ethnic
& Regional Cuisine: Carlow Cookery brings
the culinary world to you by showcasing the ingredients,
recipes, and traditions that each country has to offer.
Starting with the gastronomic epicenter, France , we'll
eat our way through Europe , Asia , and on to the new World.
You'll learn how and why certain ingredients are used, where
they can be found, and how to incorporate them into your
favorite dishes. Not
to overlook the rich bounty this country has to offer, our
tour will include stops in many of our nation's cities.
We will teach traditional dishes from cities like Chicago
, New Orleans , and San Francisco . Additionally, we discuss
the hot new chefs and how they are shaping the food to come.
Specialty
Classes: Want
to know how to choose the freshest fish? Wondering how to
maximize the flavor of the fresh herbs in your garden? Do
you want to know how to correctly use and care for your
knives or make the perfect veal stock? Our specialty classes,
a more intensive study of a single ingredient, technique
or category of food, are designed to answer these types
of questions. In
many of the classes, our professional instructors are joined
by experts in the field. By tasting ingredients side by
side and making comparisons, you'll be able to find what
you like. Our experts will let you know what to look for
when choosing seafoood, meat, produce, and other items to
get maximum flavor and quality. Our knife classes, both
beginner and advanced, are hands-on programs that allow
for one on one instruction with the student.
Culinary
Techniques I, II, & III
Good
cooking is built on a foundation of proper technique and
an understanding of some basic principles. Each of the three
programs focus on a different skill level and highlight
different cooking methods. The goal of our entire Culinary
Techniques Program is to give participants the confidence
to create dishes rather than just follow recipes.
Guest
Appearances
Classes
that call upon and showcase the talents of some of the area's
restauranteurs and gourmet caterers. You'll also have a
chance to meet nationally recognized cookbook authors as
they demonstrate recipes from their books. These sessions
offer students a chance to see how the dishes found on local
menus are prepared and gain insight on the restaurant business.
Hands-On
Classes
For
those who like to learn by doing we are now offering a variety
of day, night, and weekend hand-on classes. These are limited
to 12 participants and are an extended session of 2-1/2
hours. You'll be given specific items to prepare and then
sit down to the meal your team prepared.
Wine
Tastings
If
you are interested in learning more about wine, you'll love
Carlow Cookery's wine classes. In addition to tasting wines
from a featured area or varietal, our wine experts will
teach you about each wine, it's charecteristics and how
to judge quality. All in a casual and comfortable environment.
Bus
Trips
We
take to the road in a luxury coach to find different culinary
points of interest and shop for the ingredients you need
to make great dishes. You'll be guided to the best Italian,
Asian, and Indian grocers and spend a day shopping and dining
in New York and surrounding areas.
